Vermicular’s Musui-Kamado: A cast iron pot plus induction burner


Leave it to the Japanese to take the Instant Pot and kick it up a notch.

Vermicular, Japan’s fastest growing cookware brand, was founded in 2010 by brothers Kuni and Tomo Hijikata with an eye towards revitalizing their grandfather’s cast iron foundry. Their update birthed beautiful enameled cast iron pots made with a vermicular graphite iron mix — and the brand’s name. Taking it one step further, the brother’s developed the Musui-Kamado, which adds a dedicated induction heating base, creating the ideal environment for cooking — and serving — everything from desserts to breads to stews. Minute temperature adjustments stretch the range of what can be done to include proofing bread and fermenting yogurt. It can even be used to sous-vide.
