Culinary at the Cove Program Debuts at Mexico’s Esperanza, Auberge Resorts Collection

Led by Executive Chef Guillermo Gomez, the immersive experience involves one-of-a-kind epicurean adventures like diving for chocolata clams (aka Baja’s “seafood candy”), foraging for sea urchin, snails, and blue stone crabs along a private cove, and relaxing in one of the resort’s two new two-story beach palapas steps from the Sea of Cortez.

A few of the Esperanza’s Culinary at the Cove program highlights:
Diving for Chocolata Clams: Chef Gomez leads day-long excursions along Mexico’s Baja California Peninsula, starting with an RZR off-roading adventure along the east coast to Cabo Pulmo. There, local fisherman take guests out sea to snorkel and dive for clams. Back on shore, Chef Gomez teaches guests to properly prepare the fresh haul and hosts a beach picnic before leading the group back to the resort.
Sea Foraging: Another exciting culinary adventure from Chef Gomez is a sea urchin, stone crab, and snail foraging excursion among the rocks of Esperanza’s private beach. All the seafood caught is used back at the resort for a batch of traditional Mexican stew called Chilpachole, which combines the seafood with poblano pepper, dried oregano, fresh cilantro, and vegetables. Guests are invited to enjoy the meal with a bottle of wine on the beach.
Playa Paraíso Two-Story Open-Air Beach Palapas: Tucked into Esperanza’s private cove are two new two-story open-air beach. Each one features a day bed, swing, BOSE speaker, private butler service, a variety of additional amenities such as a Yeti Cooler filled with beverages, and add-ons like a private one-hour acoustic concert and a 60-minute massage for two. Guests can book an all-day package complete with morning yoga, breakfast, lunch, cocktail, hour, and more, or they can reserve a palapa for morning or sunset experiences.
